Christmas Flapjacks

This is one of our favorite Christmas Recipes, it’s quick and easy to make, tastes delicious and makes a nice present too.

Makes 16 medium sized flapjacks

Ingredients:-

Grated zest of 1 large Orange
6 ozs (175 gms) unsalted butter, plus a little extra for greasing the baking tin
6 ozs (175 gms)  soft brown sugar
4 tbsp (US) Light or Dark Karo Syrup or a mix of both or  (UK) Golden Syrup
11 ozs (325 gms) Rolled Oats
5 ozs (175 gms) Sweetened Dried Cranberries

Method

Preheat the oven 180C/350F/Gas 4

Lightly grease your baking tray or use a Teflon Non-Stick Baking Sheet

Put the Sugar, Syrup, Butter and orange zest into a large, heavy based saucepan and melt over a low to medium heat until everything has dissolved and melted together.

Mix the dried cranberries into the oats until they are well distributed.

Remove the pan from the heat and add the oat and fruit mixture.  Stir until it is well mixed and all the oats are covered in warm sugar mix.

Pour into the baking tray and press the mixture down firmly.

Bake for 40 minutes or until the mixture is golden brown.

Take out of the oven and leave to cool for 5 – 10 minutes.  Mark the mixture into 16 squares.  Leave until cold and then cut using your guidelines.  It is often easier to mark up the hot mixture using the back of a knife that has been dipped into cold water.

These will keep for quite a while in an airtight tin.
